I need some onion & celery recipes!!!

There are very few things I cook but what I can cook I do well! If you've ever had my chili you know I'm telling the truth! Thanksgiving dinner is definitely one of my hidden talents, especially the stuffing!!! I make an apple cranberry sausage pecan stuffing that is scrumptious!!! The only thing is I really don't like to chop up all the celery & onions. It's kind of become a tradition that my parents do it for me. My mom doesn't even ask anymore. She even reminds me that they're going to do it. Isn't that sweet! This year was no different. I always make lots of stuffing because it's so good & there's never enough left over. Last year I made it with challah bread (or one of those fancy ones - I can't recall) but this year I decided to stick with good old Arnolds cubed bags. I made the mistake of telling my mom I got four bags because we are an in-the-bird & out-of-the-bird stuffing family!! Anyway, you only need 1 cup of celery & 1 cup of onion per bag...that's 4 cups of each!!! I'm not quite sure what they were thinking because they gave me 2 huge containers of each!!! Seriously I could make a dozen trays of stuffing & still have some celery & onion left over!!! I already made my fancy out-of-the-bird stuffing. I got up early this morning & prepared it. All I have to do tomorrow is put it in the oven! Anyway, my sausage apple cranberry pecan out-of-the-bird stuffing didn't even put a dent in either container!!! So does anyone have any good onion & celery recipes because I think I'm going to have a little left over!!!

Dice both the onion and celery, mix in with canned tuna fish, add mayo or miracle whip... spread on bread. :)
